Ingredients

2 tablespoons Newgrange Gold Chilli and Garlic Rapeseed Oil Rapeseed oil

2 large English Cucumbers thinly sliced

¼ of a red onion, very thinly sliced

1 green chilli, seeded thinly sliced

1 lime, juiced

1 tsp Dukkah nut spice mix

1/2 teaspoon salt, or more to taste

Fresh mint leaves

 

Instructions:

Thinly slice the cucumber, red onion and green chilli and place into a bowl. A mandolin works really if you have one as it helps to get things to an even thinness. Drizzle with the Newgrange Gold Chilli and Garlic Rapeseed Oil Rapeseed oil and pour over the lime juice, add a pinch of salt, and toss together gently. You can place it in the fridge now until you are ready to serve, once you are ready sprinkle with the Dukkah mix and fresh mint leaves.
